The basic clinic showed a clapboard structure and hinted at cinderblock.  This is an example of such a strucuture.  The cinderblock is Plastrut sheeting in gray, with a black acrylic paint in the mortar lines.
The mortar was laid in using foam brush material and rubbing off the excess.  

Paint the entire sheet, then cut pieces as needed for the structure.  Painting mortar lines is covered in the Chimney Clinic elsewhere on this website.
